CHOCOLATE FILLED LOVE LETTER BISCUITS

Love Letter Biscuits or also known as Kuih Kapit in Malay language, is a popular all time favourite snack made during festive seasons in Malaysia. It is immensely enjoyed by the young and old as it easily melts in your mouth despite being crunchy. The thin waffle-like biscuit is made with mainly rice flour that gives it a very fragile and crispy texture. The combination of fragrance and flavour of coconut milk, egg and caramelized sugar are sure to please your gastronomical senses.

Traditional love letter biscuits are made by heating batter clasp between iron mould and heated over charcoal stove. Nowadays, we have electric love letter maker and it is very convenient and far too easy compared to  the traditional method of slow heating over hot charcoal. With this electric love letter maker, it is easier for you to add what fillings your heart desires before folding into quarter.

Origin Of Love Letter Biscuits

Out of all the festive goodies, the love letter is definitely one of the most poetic. Back in the good old days, these romantic pastries were often used by lovers to relay messages of affection and the consumption of the pastry would mean that the message is taken to heart. That is why the mold has lettering engraved on it.

For individuals familiar with how love letter pastries are made, they would say that it’s a labour of love. These pastries are made by pouring a thin layer of batter on an iron mold and baked over charcoal. It is then quickly taken off the heat and rolled up into a cylindrical shape or folded in a quarter.

Also known as ‘Kuih Kapit,’ these delicate pastries are thought to be inspired by the traditional Dutch waffles. The Malay and  the Peranakan community adopted this recipe and localized the snack with ingredients such as coconut milk and rice flour.
