Dried Anchovies (Premium Grade A – Peeled and Cleaned) 500g By MH Bakery

Mostly Malaysians, deep fry Dried Anchovies to be served as a crunchy topping. It is also eaten as sambal (spicy sauce) with nasi lemak (rich coconut rice).  For those who love soups, dried anchovies are also used to make soup stock. Instead of using chicken/meat, Dried Anchovies are substituted as an alternate source of protein and umami flavour.

 

How To Make Spicy Anchovy Fried Rice

Ingredients

  1. ⅓ cup dry anchovies (50 g), fry them until crispy and set aside
  2. 2 eggs
  3. ⅓ cup green beans (around 5 green beans), cut into 1 cm length
  4. 4 cup cooked rice (800 g), preferably one day old & short grain rice
  5. 1 tablespoon light soy sauce
  6. 2 tablespoon water
  7. 2 oz baby spinach (60 g)
  8. oil

For pounding or grinding  

  1. 2 shallots , roughly chopped
  2. 2 garlic cloves
  3. 1 tablespoon dry shrimps
  4. 1 tablespoon dry anchovies (soak both dry shrimps and anchovies for 10 minutes in water and drain them
  5. 8 Bird’s eye chilli , cut (adjust to your spicy taste)

Method:

  1. In a mortar, pound the shallots, garlic, dry shrimps, dry anchovies and chillies into a paste. Set aside. You can also use a blender or food processor.
  2. Heat a wok on medium high heat with some oil.
  3. Add in the pounded paste and cook until the shallots become soft. Add in green beans and cook for 2-3 minutes.
  4. Move everything to one side and pour in eggs. Let them harden a bit and scramble them. Mix everything.
  5. Add in cooked rice and mix well. Add in soy sauce, water and stir everything to combine.
  6. Add salt if necessary.
  7. Add in spinach, mix well and cook until they are wilted.
  8. Finally, add in fried anchovies, turn the heat off and mix everything well.
  9. Your fried rice is ready to be served.
