‘Cap O’ Chicken And Meat Kurma Powder

‘Cap O’ Chicken And Meat Kurma Powder is a staple cooking spice mix found in the pantries of Malaysian homes. It is a 100% Muslim made product with halal certification.

Let’s Make Chicken Kurma With Vegetables

Ingredients:

A: To Pound Ingredients

  • 3 cloves of garlic (chop roughly)
  • 3 shallots (chop roughly)
  • 2 inches of ginger (chop roughly)

B: Spice Paste Mix

  • 1 pack of ‘Cap O’ Chicken And Meat Kurma Powder
  • a little water

C: Aromatic Ingredients

  • 1 cinnamon sticks
  • 2 star anise
  • 4 cardamoms
  • 2 cloves
  • Curry leaves

D: Other Ingredients

  • 1/2 chicken (cut into bite size pieces, wash and leave it aside)
  • 1 carrot (cut into bite size pieces)
  • 1 potato (cut into bite size pieces)
  • 1 small bowl of light coconut milk
  • 1 large onion(cut into slices)
  • 1 small bowl of concentrated coconut milk
  • 1 to 2 tomatoes (cut into bite size pieces)
  • 2 green chillies (just cut off the top and score the chillies)
  • 2 red chillies (just cut off the top and score the chillies)
  • Salt and sugar to taste
  • 1 tablespoon Tamarind juice
  • Coriander leaves for garnish

Method:

Step 1 of 5

  • Place A: To Pound Ingredients in a pestle & mortar and pound finely. Those without a pestle & mortar, can use a mini blender. Leave the paste aside in a bowl.
  • Place B: Spice Paste Mix in a bowl and add some water to make it into a paste. Mix well and ensure there are no lumps. Leave it aside in the bowl.

Step 2 of 5

  • Pour some oil in a pan. Add C: Aromatic Ingredients and saute for a few minutes.
  • Add in B: Spice Paste Mix and give a good stir. Let it simmer for a few minutes. Add some more water and stir thoroughly.

Step 3 of 5

  • Add in the chicken pieces and mix thoroughly so that the chicken pieces are coated with the yummy gravy.
  • Add in the onions, carrots and potatoes and give another mix.
  • Add in the thin coconut milk and give a good mix. Cover with a lid to let them cook well.

Step 4 of 5

  • After a few minutes, add in the thick coconut, chillies and tomatoes. Give another good mix.
  • Finally add in some tamarind juice, sugar and salt to taste. Do a taste test and adjust accordingly.

Step 5 of 5

  • Give a minute or so and the dish would be ready. Switch off the stove and plate this tasty chicken kurma dish in a bowl.
  • Garnish with coriander leaves.
  • Serve it hot with white rice, ghee rice, rich coconut rice, rainbow rice, roti, capati or bread. Enjoy!
