Bird’s eye chili, bird eye chilli, bird’s chilli or Thai chilli is a chilli pepper, a variety from the species Capsicum annuum, commonly found in Ethiopia and across Southeast Asia. It is used extensively in many Asian cuisines.
They are presumably called Bird’s Eye Chili because of their small round shape and because they have been spread by birds, which are not affected by the heat of the peppers.
Dried Anchovies are a much loved South East Asian ingredient. Known as Ikan Bilis in Malay, they are pungent, smell of the sea and packed with umami notes and flavour. You’ll find them in a few different sizes too, from the really tiny ones to the ones that are as long as your fingers. You will find them at all Oriental stores, online or otherwise, even Amazon in the UK sells them!
